First Pepper of the season



I picked the first pepper of the season tonight and some more green onions.


How cute is this pepper?



Inside of the pepper. Not a lot of seeds which is good.




The pepper was very tasty tried some raw and it had a nice crunch and tasted so much better than what one gets in a store.





I made a quesadilla for dinner and used the pepper and green onions in it.

More Peppers

This small red pepper is almost ready to be harvested.

A new pepper has started, unique shape 

These two were to be purple peppers but are starting to red instead.

So far this one is staying purple.

Onions are growing but don't think I planted them deep enough as they are starting to poke through the soil.

Chocolate Chip Cookies anyone? Product review




Today I thought I would try the new pillsbury gluten free chocolate chip cookies that are now available in Canada.  They smelled fantastic while baking.  Tasted good as well, one of the best GF chocolate chip cookies i have tried although a little sweet.  But soft and so good warm from the oven :)

The easiest cookies to make open container drop cookies onto cookie sheet and put in oven.  5 easy steps :)


Step 1 Remove container from fridge

Step 2 remove lid

Step 3 Drop by tablespoon onto cookie sheet and put in oven

Step 4 11 minutes later remove from oven and cool.



Step 5 Put on plate and enjoy

Turkey Meatballs with gravy



Today I made turkey meatballs with sauce/gravy. They can be served over noodles or mashed potatoes.


Mix together ground turkey, lea & perrins, egg, crushed brown rice krispies, diced green onions.




Add coconut oil to a pan and place meatballs in the pan.  I used a mini ice cream scoop to make the meatballs. Brown the meatballs and then remove from pan.



Add some more oil if needed to the pan and add diced onion.  cook for a couple of minutes.  Then add some chicken stock to deglaze the pan.





Add the meatballs back into the pan.

Add chicken broth to the pan to cover the meatballs. Bring to a boil and then low the temperature to low and cover.



Remove the meatballs.  Add the rest of the chicken stock to the pan and lea & perrins, salt and pepper. bring to a boil.  Then add some cornstarch that has been mixed with water.  Continue boiling until the sauce as thicken.  Add the meatballs back into the sauce and set aside until ready to serve.  Serve with noodles or potatoes.




TURKEY MEATBALLS WITH GRAVY


1 LB of ground turkey

2 green onions, diced

2T lea & perrins gf

1 egg

1/2 crushed brown rice krispies or gf bread crumbs


Mix all ingredients together. Form into meatballs.

In a large saucepan, melt coconut oil, add the meatballs and brown them on both sides.  Once browned remove from pan.  Add more oil if necessary and 1 diced onion.  Cook the onion for a couple of minutes then add some chicken stock to deglaze the pan.  Then add the meatballs back into the pan.  Add more chicken stock until the meatballs are covered.  Bring it to a boil then lower the temperature and cover.  Simmer for about an hour or until the meatballs are done.

Once the meatballs are cooked remove the meatballs.  Add the rest of the chicken stock to the pan turn up heat and bring to a boil.  Add a couple of tablespoons of lea & perrins and some salt and pepper to taste.  Once the mixture is boiling.  Add some cornstarch that has been mixed with water. Continue to boil until the sauce has thicken, then add the meatballs back into the sauce and keep warm.

The meatballs and sauce can be served over noodles or potatoes.

First Bunching (Green) Onions from the garden and peppers almost ready




The first cutie mini red pepper is almost ready to be picked.  Looks like the heat, and rain from last weekend has helped these peppers.









The one regular size red pepper in the other planter is almost ready as well and I am help to see a new one starting as well.






In addition,  I pulled two bunching/spring/green onions.  They will be going in the salad with tonights dinner.

Two new muffin recipes attempted.





What to do on a Saturday on a long hot humid weekend?  Well I decided to create 2 new muffin recipes that were wheat free, dairy free and egg free. One muffin was double chocolate muffin and the other one oatmeal chocolate chip.

The intention was good and everything looked like it was proceeding well and I tasted the dough and it wasn't bad.

However, the final result was not good.  They took so long too cook that they were well done on the outside and who likes a well done muffin!!  I took them out of the oven and let them cool, I was still holding onto hope for them.  But when I bite into them they were very mushy inside not a good thing.

Although this may sound like a failure I like to look at it as a learning curve. The recipes didn't turn out exactly as I would have liked.  But am willing to try these recipes again and this time make some adjustments and make mini muffins perhaps that will yield better results.  

That is the thing with baking it may not always turn out the first time so try again.
