Crock Pot Boneless Honey Chicken "wings"



Tonight I made boneless chicken wings in the crock pot.  I used boneless, skinless chicken breasts which I sliced the breast on the diagonal in the size of a chicken wing.  Added the chicken to the crock pot.



I prepare a sauce using hot water, honey, pepper, oil, Tabasco sauce, cornstarch, salt and pepper.  Mix it all together and then added it to the chicken in the crock pot.



Put the lid on the crock pot and set it to high for 2.5 hours.



 After 2.5 hours I removed the chicken to a plate and thicken the sauce with a slurry of cornstarch and water. Cooked on high for 15 minutes and then added the chicken back into the sauce and cooked for an additional 15 minutes.



 Then plated the chicken and added some sliced green onions.




Next time I will make the sauce thicker and add a little more Tabasco.

Crock Pot Gluten Free Turkey Meatballs



Made some turkey meatballs in the crock pot, my first time making them in a crockpot.  For the meatballs I used ground turkey, grated ginger, pepper, lea&perrins GF, 1 egg, and GF rice krispies that had been ground in mini chopper.  Then shaped the meatballs and added to the crockpot.


Placed the lid on the crockpot and set on high for 3 hours.



I removed the meatballs from the crockpot and added the liquid to the pan gravy i made on the stove.  The gravy used broth, lea & perrins, cornstarch, diced onions and the liquid from the meatballs.  Then I added the sauce to the crock pot and added the meatballs and cooked for another 30mins.





The meatballs did not dry out as they sometimes do when cooking in the oven.

Crock Pot Sweet and Sour Pork



Today I made a sweet and sour pork dish in my crock pot.  I trimmed pork tenderloin and then sliced it into chunks.  I added these to the crockpot and seasoned it with pepper.



Then I added drained canned chunk pineapple (reserve the juice)  and sliced red onion.



Then in a measuring cup i made the sauce by combining the reserved pineapple juice, coconut sugar, tamari sauce, vinegar and water.  Once this was mixed together i added it to the crockpot.  And then set the crockpot and low to cook for hours.




After 8 hours the kitchen was smelling terrific.  I removed the lid and added diced green onions and cooked for another 5 minutes.




The pork was so tender and the sauce was delicious.  I served it over rice and alongside of baby bok choy.  Very very delicious :)

Gluten Free Muffins




Mini Blueberry Gluten Free muffins and Chocolate Chip Gluten Free muffins.


Today I baked two versions of a gluten free recipe that I found on Jamie Oliver's website.  Here is the link to the original recipe

The first batch I made was the mini blueberry muffins.  I didn't have shortening as the recipe states so I used butter instead.  I added eggs, vanilla, butter, coconut sugar and vanilla to the food chopper.



Next I added the coconut flour, baking soda and salt.

Here are the muffins on a plate.  As you may notice they are funny shaped.  Caveat for others.  Either use paper liners or thoroughly grease the muffin tin which obviously I did not as every single one stuck :(



Now, I decided to attempt this recipe again but with changes.  I made chocolate chip muffins.  I added cinnamon, nutmeg and mini chocolate chips to the batter and of course used butter instead of shortening.

The final verdict is the chocolate chip muffin was good was a similiar texture to non gluten free.  Gotta get use to the coconut flour.  I think chopped pineapple in the muffin would be good since pineapple and coconut go together well.  Overall I think this was a successful recipe :)

Gluten Free Pizza Anyone?



Today I felt like making pizza.  Went the store to get the pizza mix I like BUT the store didn't carry Stonewall Kitchen Herbed Pizza Mix(Gluten Free) anymore. Disappointed but since I had all the ingredients for pizza I decided to try Glutino pizza mix.



Never had a mix that called for so many ingredients including 2 eggs.  Made the dough and made a round pizza and a rectangle one.


Fresh red peppers from the garden as well as fresh green onions.





Toppings for pizza.  Pineapple, red onions, chopped spinach, red peppers, turkey sausage, watercress and green onions


The pizzas are ready for the oven.

The final verdict I much prefer the Stonewell Kitchen GF pizza mix.  That being said I would try this again but make more pizzas from it I prefer a much thinner crust.  Also I would add herbs to the dough so that it would be tastier.

Also, I think this would make great focaccia,  It would make a large one but am considering mini size ones as appetizers or as party food for game days. :)

Cauliflower Sweet Potato Soup



Happy Labour Day!!! The first day of September and I decided to make some soup.   I chopped 2 onions, 2 large heads of Cauliflower, 2 peeled and chopped sweet potatoes and one carton of stock.  I added all this to a stock pot ( I think I need a bigger one) and simmered until tender.  Then I pureed it with an immersion blender.  Then added salt, pepper and nutmeg. Reheated and served.
