Turkey Meatballs with gravy



Today I made turkey meatballs with sauce/gravy. They can be served over noodles or mashed potatoes.


Mix together ground turkey, lea & perrins, egg, crushed brown rice krispies, diced green onions.




Add coconut oil to a pan and place meatballs in the pan.  I used a mini ice cream scoop to make the meatballs. Brown the meatballs and then remove from pan.



Add some more oil if needed to the pan and add diced onion.  cook for a couple of minutes.  Then add some chicken stock to deglaze the pan.





Add the meatballs back into the pan.

Add chicken broth to the pan to cover the meatballs. Bring to a boil and then low the temperature to low and cover.



Remove the meatballs.  Add the rest of the chicken stock to the pan and lea & perrins, salt and pepper. bring to a boil.  Then add some cornstarch that has been mixed with water.  Continue boiling until the sauce as thicken.  Add the meatballs back into the sauce and set aside until ready to serve.  Serve with noodles or potatoes.




TURKEY MEATBALLS WITH GRAVY


1 LB of ground turkey

2 green onions, diced

2T lea & perrins gf

1 egg

1/2 crushed brown rice krispies or gf bread crumbs


Mix all ingredients together. Form into meatballs.

In a large saucepan, melt coconut oil, add the meatballs and brown them on both sides.  Once browned remove from pan.  Add more oil if necessary and 1 diced onion.  Cook the onion for a couple of minutes then add some chicken stock to deglaze the pan.  Then add the meatballs back into the pan.  Add more chicken stock until the meatballs are covered.  Bring it to a boil then lower the temperature and cover.  Simmer for about an hour or until the meatballs are done.

Once the meatballs are cooked remove the meatballs.  Add the rest of the chicken stock to the pan turn up heat and bring to a boil.  Add a couple of tablespoons of lea & perrins and some salt and pepper to taste.  Once the mixture is boiling.  Add some cornstarch that has been mixed with water. Continue to boil until the sauce has thicken, then add the meatballs back into the sauce and keep warm.

The meatballs and sauce can be served over noodles or potatoes.
